My Easter version of the Green Bean Bundles



Green Bean Bundles - Easter Version
Please visit Green Bean Bundles in the Eating Well Magazine for the recipe.  I changed things up a bit by substituting yellow green beans for red and soaked the scallion 'ribbons' in beet juice to create the pink.

And, here is a photo of mine. Note: I serve it with a dollop of fat free sour cream and a sprinkling of fresh (or dried) cilantro.

Here it is again...one of my favorite recipes: Black Bean, Sweet Potato and Corn Chili - Yum!

This recipe can be found in Eating Well Magazine as Sweet Potato and Black Bean Chili. I just add some frozen roasted corn from Trader Joe's plus, as you can see, a dollop of sour cream (I use fat free by Naturally Yours).
It's good enough to serve to company together with a tossed green salad and some crunchy french bread. Enjoy! Pam Pam's Fab Photos

Looking ahead to the 2014 Gardening Season!! And, I'm excited!!

Hi, All - I ordered some of my plants and seeds for my garden from Burpee.com yesterday. I am going to try this delicious-sounding vegetable: As I've said previously, my garden is in containers on my veranda with an easterly exposure. I receive just about 'enough' direct sunlight plus I have a man-made lake below which reflects the sunlight also; and between everything, I manage to have a very productive garden. http://www.burpee.com/vegetables/peas/pea-peas-in-a-pot-prod002732.html

Black Bean/Corn/Sweet Potato Chili - one of my 'FAVS'

Here's a photo of this delicious, nutritious, dish.
I was first introduced to this recipe through Eating Well Magazine (without the corn) and you can obtain that original recipe from their website: EatingWell.com. Click on the search bar for recipes and it will come right up. However, a friend suggested I add corn because her husband loves corn in this type of dish. I decided to include some frozen corn and it is a real 'crowd-pleaser'. In fact, I use the frozen Roasted Corn from Trader Joe's.
